Shrimp Casserole

  

Shrimp and Rice Casserole
This is seriously one of my hubby's favorite meals, and it is super easy. The casserole dish to the right with the lemons is the smaller one, and it made another big casserole dish full.

1 stick of butter
1 onion (chopped)
In our grocery stores they have a "seasoning blend" fresh in the refrigerator section by the salad, that is what I use in almost all my recipes, it has onion, bellpepper, parsley, celery and garlic in it, so if you use this you wont need onion.
I like to add extra Garlic
1 can cream of mushroom soup
1 can cheddar cheese soup
1 lb shrimp or crawfish (i use frozen this time of year)
Salt, pepper, seasoning to taste.
Lemon slices
2 cups rice

Ok, get the rice cooking in your rice cooker or on the stove.
Then, sautee your veggies in 1 stick of butter
add you shrimp and sautee for a couple of minutes
add in seasonings and soups.
When rice is finished mix everything together in the pot (shrimp mix and rice)
Then put in casserole Dish, top with cheese, breadcrumbs, and lemon slices.
Cover and bake 30 minutes.
Done!

It is soooo good, and will feed a small army. Enjoy:)!
