After being home or in the hospital for 2 weeks, I am happy to say everyone in the house is well! (Not including a runny nose here or there) but who counts that?? Not me.
Little G is back to her old, laughing, playing, smiling self. After watching her brother make her laugh last night for about 20 minutes, until she got the hiccups, I am glad to say that we are back to ourselves!
So....during 2 weeks of being on house or hospital arrest I am happy to be able to get out into the real world again, although it was nice to snuggle with babies. So, as I go to make my menu this week, I will share a few of our fall fav's!
I am not a wonderful creative cook, I do meals that are simple, good, cheap and fast. So, for all you working moms, or just moms who want a quick yummy meal, Enjoy!!
Crawfish or Shrimp & Corn Bisque
1lb. frozen or fresh crawfish or shrimp Show all
1 qt. 1/2 and 1/2
2 cans cream of potato soup
1 can regular corn
1 can cream style corn
cajun seasoning to taste
onion
1 stick butter
1 tbsp. crab boil
garlic
Saute garlic and onion in stick of butter (10 minutes). Add in all other ingredients except the seafood. When comes to a boil, add in seafood. Simmer until seafood is cooked (10 minutes). Serve with salad and bread. So easy, 20 minutes, and SO good!
Grilled Chicken Kabobs
Chicken breasts or steak
Green pepper
onion
mushrooms
pineapple (if you like)
Cut all into bite sized pieces
Marinate meat and veggies in 1/2 soy sauce 1/2 red wine vinegar mixture for a couple of hours. Or you can marinate in italian dressing! Stick on some sticks and have the hubby throw on the grill! Throw some potatoes in the oven for baked potatoes or sweet if you are the healthy type. Then, add a salad for a quick, easy and barely no clean up meal!!
